- 2 cups cooked turkey, diced or shredded
- 1 box (14.1 oz) refrigerated pie crusts (2 crusts)
- 1/3 cup unsalted butter
- 1/3 cup chopped yellow onion
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1 3/4 cups turkey or chicken broth
- 2/3 cup whole milk
- 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 425°F (218°C). Take your refrigerated pie crusts out of the fridge to let them soften slightly. Press one of the crusts into the bottom of a 9-inch glass pie plate and set it aside.
- In a large saucepan or skillet, melt the butter over medium heat. Add the chopped onions and cook for about 2 to 3 minutes until they are soft and translucent. Do not let them brown too much.
- Whisk in the flour, salt, black pepper, and dried thyme. Continue to stir and cook for 1 minute to remove the raw flour taste. The mixture should look like a thick paste.
- Slowly whisk in the turkey broth and the milk. Continue to cook and stir over medium heat until the mixture bubbles and thickens into a creamy gravy. This usually takes about 5 to 7 minutes.
- Stir the diced turkey and the frozen mixed vegetables into the gravy. Mix well until everything is evenly coated in the sauce. Remove the pan from the heat.
- Pour the turkey mixture into the bottom pie crust. Place the second pie crust on top. Trim the edges, seal them together, and flute them with your fingers. Cut small slits in the top crust to allow steam to escape during baking. Brush the top with the beaten egg wash.
- Place the pie in the oven and bake for 30 to 35 minutes. The crust should be a beautiful golden brown and the filling should be bubbling. If the edges brown too quickly, cover them with strips of foil.
- Remove the pie from the oven and let it sit for 10 to 15 minutes before slicing. This allows the filling to set so it doesn’t run when you serve it.
