- 1 bag of Doritos
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can of black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup diced onions
- 1/4 cup sliced jalapeños (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground beef or turkey in a skillet over medium heat until browned. Drain excess fat.
- Add taco seasoning to the cooked meat and mix according to package instructions.
- Combine the seasoned meat with black beans, corn, diced tomatoes, and half of the shredded cheese.
- Layer half of the Doritos in a greased casserole dish, followed by half of the meat mixture, then half of the shredded lettuce, diced onions, and jalapeños.
- Repeat the layering process with remaining Doritos and meat mixture, followed by the rest of the lettuce, onions, and jalapeños.
- Sprinkle the remaining cheese on top.
- Bake in the preheated oven for 20-25 minutes, until cheese is melted and bubbly.
- Serve with sour cream as a topping.
Notes
Offer with guacamole, fresh salsa, or tortilla chips for extra crunch. Pair with Mexican rice or a green salad.
