Ingredients

  • 1 bag of Doritos
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can of black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup diced onions
  • 1/4 cup sliced jalapeños (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef or turkey in a skillet over medium heat until browned. Drain excess fat.
  3. Add taco seasoning to the cooked meat and mix according to package instructions.
  4. Combine the seasoned meat with black beans, corn, diced tomatoes, and half of the shredded cheese.
  5. Layer half of the Doritos in a greased casserole dish, followed by half of the meat mixture, then half of the shredded lettuce, diced onions, and jalapeños.
  6. Repeat the layering process with remaining Doritos and meat mixture, followed by the rest of the lettuce, onions, and jalapeños.
  7. Sprinkle the remaining cheese on top.
  8. Bake in the preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  9. Serve with sour cream as a topping.

Notes

Offer with guacamole, fresh salsa, or tortilla chips for extra crunch. Pair with Mexican rice or a green salad.
