- 1 packet taco seasoning
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1 can black beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 1 cup tortilla chips, crushed
- 1/2 cup Catalina dressing
Instructions
- In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat, then add the taco seasoning and prepare according to package instructions.
- In a large bowl, combine the chopped lettuce, halved cherry tomatoes, black beans, corn, and the cooked beef. Toss these ingredients gently to mix them thoroughly.
- Toss the salad mixture with the Catalina dressing until everything is evenly coated.
- Serve immediately, topping each bowl with shredded cheddar cheese and crushed tortilla chips.
Notes
For a leaner option, substitute ground beef with ground turkey or chicken. Chill ingredients for a refreshing salad.
