  • 1 packet taco seasoning
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 can black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 cup tortilla chips, crushed
  • 1/2 cup Catalina dressing

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat, then add the taco seasoning and prepare according to package instructions.
  2. In a large bowl, combine the chopped lettuce, halved cherry tomatoes, black beans, corn, and the cooked beef. Toss these ingredients gently to mix them thoroughly.
  3. Toss the salad mixture with the Catalina dressing until everything is evenly coated.
  4. Serve immediately, topping each bowl with shredded cheddar cheese and crushed tortilla chips.
