  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen or canned corn
  • 1.5 cups salsa (mild, medium, or hot)
  • 8 to 10 medium flour tortillas (cut into halves or quarters to fit the pan)
  • 3 cups Mexican blend shredded cheese
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Optional: Sour cream, sliced jalapeños, and diced tomatoes for serving

Instructions

  1. Step 1: Preheat and Prepare Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with non-stick cooking spray or a small amount of oil to prevent the tortillas from sticking.
  2. Step 2: Brown the Beef In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is fully browned and the onions are translucent. Drain any excess grease from the pan. Add the minced garlic and cook for an additional minute until fragrant.
  3. Step 3: Create the Filling Stir in the taco seasoning, black beans, corn, and salsa. Let the mixture simmer over low heat for about 5 minutes, allowing the flavors to combine and the sauce to thicken slightly. Remove from heat.
  4. Step 4: Layer the Lasagna Spread a thin layer of the meat mixture on the bottom of the prepared baking dish. Place a layer of tortillas over the meat, cutting them as needed to cover the surface. Spread one-third of the remaining meat mixture over the tortillas, then sprinkle with one cup of shredded cheese. Repeat these layers twice more, ending with a generous layer of cheese on top.
  5. Step 5: Bake to Perfection Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is melted, bubbly, and slightly golden brown on the edges.
  6. Step 6: Rest and Garnish Remove the lasagna from the oven and let it rest for 5 to 10 minutes before slicing. This helps the layers set so it stays together when served. Garnish with fresh cilantro before serving.
