A comforting chili dish featuring sweet potatoes and ground turkey, perfect for chilly evenings.

Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) diced tomatoes
  • 1 cup chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add chopped onions and minced garlic to the pot, sautéing until the onions are translucent and fragrant, about 3-5 minutes.
  3. Stir in the ground turkey and cook until browned, breaking it apart with a spoon as it cooks for about 5-7 minutes.
  4. Add the diced sweet potatoes, black beans, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the sweet potatoes are tender. Serve warm and enjoy!

Notes

For added depth of flavor, try adding a bay leaf while simmering, but remember to remove it before serving. If you prefer more heat, add diced jalapeños or a pinch of cayenne pepper.
