- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) diced tomatoes
- 1 cup chicken broth
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add chopped onions and minced garlic to the pot, sautéing until the onions are translucent and fragrant, about 3-5 minutes.
- Stir in the ground turkey and cook until browned, breaking it apart with a spoon as it cooks for about 5-7 minutes.
- Add the diced sweet potatoes, black beans, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the sweet potatoes are tender. Serve warm and enjoy!
Notes
For added depth of flavor, try adding a bay leaf while simmering, but remember to remove it before serving. If you prefer more heat, add diced jalapeños or a pinch of cayenne pepper.
