- 2 cups mashed sweet potatoes (about 2–3 medium potatoes)
- 1/2 cup softened butter
- 1 cup white sugar
- 1/2 cup whole milk
- 2 large eggs
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 (9 inch) unbaked pie crust
Instructions
- Boil the whole sweet potatoes in water for 40 to 50 minutes, or until they are soft. Run them under cold water to peel off the skins easily. Place the peeled potatoes in a bowl and mash them until they are completely smooth and free of lumps.
- In a large mixing bowl, combine the mashed sweet potatoes with the softened butter. Use an electric mixer to blend them until the mixture is creamy. Add the sugar, milk, eggs, nutmeg, cinnamon, and vanilla extract. Beat on medium speed until the filling is light and uniform.
- Preheat your oven to 350 degrees F (175 degrees C). Pour the sweet potato mixture into the unbaked pie crust. Smooth the top with a spatula to ensure it is level so it bakes evenly.
- Place the pie in the center of the preheated oven. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. The pie will firm up more as it cools.
