Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a muffin tin by lightly greasing it or lining it with paper liners.
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy. Beat in the egg and vanilla extract.
  3. Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add to the creamed mixture, stirring until just combined. Divide the dough into the muffin tin, pressing gently to form cups. Bake for 10-12 minutes.
  4. Remove the cookie cups from the oven and allow them to cool before filling with whipped cream and topping with strawberries. Serve immediately.

Notes

Use room temperature butter for easier creaming. Choose ripe strawberries for the best flavor.
