These Spinach, Feta & Egg White Bites are a delightful and nutritious option for breakfast or as a protein-packed snack.

Ingredients

  • 2 cups fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 6 egg whites
  • 1/4 cup milk
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or olive oil.
  2. Whisk together the egg whites and milk until combined.
  3. Stir in the chopped spinach and crumbled feta cheese. Season with salt and pepper to taste.
  4. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 15-20 minutes or until the egg bites are set and lightly golden.
  6. Allow to cool slightly before removing from the tin.

Notes

For a creamier texture, add a splash of cream in place of milk. You can also add other vegetables for variety.
