- 2 cups fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 6 egg whites
- 1/4 cup milk
- Salt and pepper to taste
- Cooking spray or olive oil for greasing
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or olive oil.
- Whisk together the egg whites and milk until combined.
- Stir in the chopped spinach and crumbled feta cheese. Season with salt and pepper to taste.
- Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 15-20 minutes or until the egg bites are set and lightly golden.
- Allow to cool slightly before removing from the tin.
Notes
For a creamier texture, add a splash of cream in place of milk. You can also add other vegetables for variety.
