- 2 lbs Yukon Gold potatoes, peeled and cubed
- 1 medium onion, diced
- 2 large carrots, diced
- 1 cup frozen peas
- 2 cloves garlic, minced

- 2 tablespoons tomato paste
- 1 cup beef or lamb broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 tablespoons butter
- 1/2 cup milk or heavy cream
- Salt and black pepper to taste
Instructions
- Step 1: Boil the Potatoes: Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook for about 15 to 20 minutes, or until the potatoes are fork-tender. Drain the water thoroughly.
- Step 2: Mash the Potatoes: In the same pot, add the butter and milk to the warm potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Set these aside for the topping.
- Step 3: Brown the Meat: While the potatoes are boiling, heat a large skillet over medium-high heat. Add the ground lamb or beef. Cook until browned, breaking it apart with a spoon. Drain off any excess fat from the pan.
- Step 4: Sauté Aromatics and Veggies: Add the diced onions and carrots to the skillet with the meat. Sauté for about 5 to 7 minutes until the vegetables begin to soften. Stir in the minced garlic and cook for another minute until fragrant.
- Step 5: Create the Gravy: Sprinkle the flour over the meat mixture and stir well to coat. Add the tomato paste, broth, Worcestershire sauce, thyme, and rosemary. Simmer for 5 to 10 minutes until the liquid has thickened into a rich gravy. Stir in the frozen peas during the last minute.
- Step 6: Assemble the Pie: Preheat your oven to 400°F (200°C). Pour the meat and vegetable mixture into a 9×13 inch baking dish. Spread it out into an even layer. Spoon the mashed potatoes over the top, using a fork to smooth them out and create decorative ridges.
- Step 7: Bake to Perfection: Place the dish in the oven and bake for 20 to 25 minutes. The potato topping should be golden brown, and the filling should be bubbling around the edges. Let it rest for 5 minutes before serving.
