- 1 pound smoked sausage, sliced
- 2 cups zucchini, sliced
- 2 cups bell peppers, chopped
- 1 cup cherry tomatoes, halved
- 1 red onion, chopped
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the sliced sausage, zucchini, bell peppers, cherry tomatoes, and red onion on a large sheet pan.
- Drizzle with olive oil and season with garlic powder, Italian seasoning, salt, and pepper. Toss until well coated.
- Spread the mixture in a single layer on the sheet pan.
- Bake in the preheated oven for 25-30 minutes, stirring halfway through until vegetables are tender and sausage is browned.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave.
