  • 1/2 cup milk (dairy, almond, oat, or soy milk)
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1/2 cup diced peaches (fresh, frozen, or canned)
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1 pinch of salt
  • 1 tablespoon chopped pecans or walnuts (optional)

Instructions

  1. In a mason jar or a sealable glass container, add the rolled oats, milk, Greek yogurt, maple syrup, vanilla extract, cinnamon, ginger, and a pinch of salt. Stir the mixture thoroughly until all the ingredients are well combined and the spices are evenly distributed.
  2. Add most of the diced peaches to the jar, leaving a few pieces aside for a garnish later. Gently fold the peaches into the oat mixture so they are submerged. This allows the fruit juices to meld with the oats overnight.
  3. Seal the container tightly with a lid. Place it in the refrigerator for at least 4 hours, though letting it sit overnight (about 8 hours) yields the best, creamiest texture.
  4. In the morning, give the oats a quick stir. If the mixture is too thick, you can splash in a little extra milk. Top with the remaining peach slices and the optional chopped pecans or walnuts for a delightful cobbler-style crunch. Enjoy chilled!
