- 1/2 cup rolled oats (old-fashioned oats)
- 1/2 cup milk (dairy, almond, oat, or soy milk)
- 1/4 cup Greek yogurt (plain or vanilla)
- 1/2 cup diced peaches (fresh, frozen, or canned)
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground ginger
- 1 pinch of salt
- 1 tablespoon chopped pecans or walnuts (optional)
Instructions
- In a mason jar or a sealable glass container, add the rolled oats, milk, Greek yogurt, maple syrup, vanilla extract, cinnamon, ginger, and a pinch of salt. Stir the mixture thoroughly until all the ingredients are well combined and the spices are evenly distributed.
- Add most of the diced peaches to the jar, leaving a few pieces aside for a garnish later. Gently fold the peaches into the oat mixture so they are submerged. This allows the fruit juices to meld with the oats overnight.
- Seal the container tightly with a lid. Place it in the refrigerator for at least 4 hours, though letting it sit overnight (about 8 hours) yields the best, creamiest texture.
- In the morning, give the oats a quick stir. If the mixture is too thick, you can splash in a little extra milk. Top with the remaining peach slices and the optional chopped pecans or walnuts for a delightful cobbler-style crunch. Enjoy chilled!
