- 1/4 cup black or white chia seeds
- 1 cup unsweetened almond milk (or milk of choice)
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon pure vanilla extract
- 2 large ripe peaches, pitted and diced
- 1/2 cup Greek yogurt (plain or vanilla)
- 1/4 cup granola (for crunch)
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium bowl or glass jar, combine the chia seeds, almond milk, maple syrup, and vanilla extract. Whisk or stir vigorously for about two minutes to ensure the seeds are well distributed and don’t clump together at the bottom.
- Cover the mixture and place it in the refrigerator. Let it sit for at least 4 hours, or ideally overnight. The seeds will absorb the liquid and transform into a thick, pudding-like consistency. Give it one more stir after the first 30 minutes if possible.
- Wash and dice your fresh peaches into bite-sized pieces. If the peaches are particularly tart, you can toss them with a tiny drizzle of maple syrup, but usually, ripe summer peaches are sweet enough on their own.
- Take two serving glasses. Start with a layer of the chilled chia pudding at the bottom. Follow with a layer of Greek yogurt, then a generous handful of diced peaches. Repeat the layers until the glasses are full.
- Top each parfait with a sprinkle of granola for a satisfying crunch. Garnish with a fresh mint leaf or an extra slice of peach if desired. Serve immediately while chilled.
