- 1/4 cup black or white chia seeds
- 1 cup unsweetened almond milk (or milk of choice)
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon pure vanilla extract
- 2 large ripe peaches, diced or sliced
- 1/2 cup Greek yogurt (plain or vanilla)
- 2 tablespoons granola for topping
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium bowl or glass jar, combine the chia seeds, milk, maple syrup, and vanilla extract. Whisk or stir vigorously for about two minutes to ensure the seeds are well-distributed and don’t clump together at the bottom.
- Cover the bowl or jar and place it in the refrigerator for at least 2 hours, or ideally overnight. The chia seeds will absorb the liquid and expand, creating a thick, pudding-like texture.
- Wash your peaches thoroughly. Slice them into thin wedges or cut them into small bite-sized cubes. If your peaches are a bit tart, you can toss them in a tiny drizzle of honey before layering.
- In two serving glasses or mason jars, start by adding a layer of the chilled chia pudding. Follow with a layer of Greek yogurt, and then a generous layer of fresh peaches. Repeat the layers until the glasses are full.
- Right before serving, sprinkle the top of each parfait with granola for a delightful crunch. Garnish with a fresh mint leaf if you want to make it look extra fancy.
