- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- Mini cereal (for toppings)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, combine the milk, egg, and melted butter. Whisk these ingredients together until they are smooth and homogenous.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine! Heat a non-stick skillet over medium heat. Pour about 1/4 cup of batter for each pancake onto the skillet. Allow the pancakes to cook until bubbles form on the surface, then flip them over and cook until they are golden brown.
- Once the pancakes are cooked, serve them warm with a generous sprinkle of mini cereal on top to add a delightful crunch.
Notes
For lighter pancakes, avoid overmixing the batter; leaving it a bit lumpy is okay! Experiment with different types of mini cereal toppings.
