- 1 pound ground beef
- 1 cup orzo pasta
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups beef broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Feta cheese for garnish
- Fresh parsley for garnish
Instructions
- Begin by browning the ground beef in a large pot over medium heat. Be sure to drain any excess fat.
- Next, add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent.
- Now, stir in the diced tomatoes, beef broth, orzo pasta, dried oregano, dried basil, salt, and pepper. Bring to a boil, then lower the heat and let it simmer for about 10 minutes.
- Remove the pot from heat and allow it to sit for a few minutes. Top with crumbled feta cheese and freshly chopped parsley before serving.
Notes
This dish pairs well with a simple side salad or warm, crusty bread. A glass of red wine enhances the flavors beautifully.
