- 1 lb chicken breast, diced
- 1 package gnocchi
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup Parmesan cheese, grated
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat a bit of oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes.
- Add the minced garlic and cook for 1 minute until fragrant. This step will fill your kitchen with a delicious aroma!
- Pour in the chicken broth and bring to a simmer. Then, add the gnocchi and cook according to package instructions, usually about 3-5 minutes.
- Stir in the heavy cream, Parmesan cheese, lemon juice, salt, and pepper. Cook until the sauce thickens, stirring occasionally. Serve hot, garnished with fresh parsley for a pop of color.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat with a splash of chicken broth or cream to loosen the sauce.
