Instructions
- Cook the rice according to package instructions. Once cooked, fluff the rice and mix in lime juice, zest, and cilantro.
- Prepare the veggie mixture by combining black beans, corn, cherry tomatoes, avocado, red onion, cumin, salt, and pepper in a large bowl.
- Assemble your bowl with cilantro lime rice at the base and top with the veggie mixture.
- Add optional toppings like salsa, sour cream, or cheese and serve immediately.
Notes
Store leftovers in airtight containers and reheat gently before serving. For extra flavor, sauté the corn before adding.
