- 8 oz pasta (e.g., rotini or penne)
- 1 cup corn (fresh, frozen, or canned)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions; drain and let cool.
- In a large bowl, combine the cooked pasta, corn, cherry tomatoes, red onion, cilantro, and feta cheese.
- In a separate bowl, mix together the mayonnaise, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine. Serve chilled.
Notes
Best served chilled. Can be made ahead of time and stored in the refrigerator for up to 3 days.
