- 1 lb Halal chicken breast, cut into small 1/2 inch cubes
- 6 strips Halal beef or turkey bacon, chopped
- 2 large Russet or Yukon Gold potatoes, peeled and diced into small cubes
- 1 medium yellow onion, finely diced
- 1 red bell pepper, diced
- 3 tablespoons pure maple syrup
- 2 tablespoons olive oil (if needed)
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- Fresh parsley or green onions for garnish
Instructions
- Start by dicing your Halal chicken, bacon, potatoes, and vegetables. Keeping the potato cubes small and uniform ensures they cook through quickly and get crispy on the outside. Pat the chicken dry with a paper towel to help it sear better in the pan.
- Place a large skillet over medium heat. Add the chopped Halal beef or turkey bacon. Cook until the bacon is crispy and has rendered its fat. Use a slotted spoon to remove the bacon bits and set them aside on a paper towel, leaving the flavorful fat in the skillet.
- Increase the heat to medium-high. Add the cubed chicken to the skillet. Season with salt, pepper, garlic powder, and smoked paprika. Brown the chicken on all sides until fully cooked through, about 5-7 minutes. Remove the chicken from the pan and set it aside with the bacon.
- If the pan is dry, add 1-2 tablespoons of olive oil. Toss in the diced potatoes. Cover the skillet with a lid for about 5 minutes to let the steam soften them. Remove the lid and add the onions and bell peppers. Sauté for another 8-10 minutes, stirring occasionally, until the potatoes are golden brown and crispy.
- Add the cooked chicken and bacon back into the skillet with the potatoes and vegetables. Pour the maple syrup over the entire mixture. Stir well to coat everything evenly. Let it cook for another 2 minutes, allowing the syrup to bubble and turn into a sticky, delicious glaze.
- Remove the skillet from the heat. Taste and add more salt or pepper if necessary. Garnish with freshly chopped parsley or green onions for a pop of color and freshness.
