Ingredients

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 2 cups peaches, sliced
  • 1/2 teaspoon cinnamon
  • 1 tablespoon brown sugar

Instructions

  1. In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.
  3. Combine the wet and dry ingredients, stirring gently until just mixed. Heat a skillet over medium heat and melt a small amount of butter in it. Pour in the batter to form pancakes, cooking until bubbles form on the surface, then flip and cook until golden brown.
  4. For the peach topping, sauté the sliced peaches in a pan with cinnamon and brown sugar until they are tender and aromatic. Serve the pancakes topped with the warm peach cobbler mixture.

Notes

Don’t overmix the batter to keep pancakes fluffy. Use ripe peaches for the best flavor.
