- 1/3 cup mini dark chocolate chips

- Step 1: Combine Dry Ingredients: In a medium-sized mixing bowl, whisk together the almond flour, vanilla protein powder, and salt. Make sure there are no large clumps of flour or protein powder so the texture remains smooth.
- Step 2: Add Wet Ingredients: Pour in the maple syrup, vanilla extract, and one tablespoon of the almond milk. Stir the mixture with a spatula or spoon until a thick dough forms. If the dough seems too dry or crumbly, add the second tablespoon of milk gradually until it reaches a cookie dough consistency.
- Step 3: Fold in Chocolate Chips: Gently fold in the mini dark chocolate chips using your spatula. Ensure they are evenly distributed throughout the dough so every bite has a bit of chocolate.
- Step 4: Roll Into Bites: Using your hands or a small cookie scoop, take about one tablespoon of dough at a time and roll it into a ball. Place the bites on a plate or a parchment-lined tray. You should get about 12 even-sized bites.
- Step 5: Chill and Set: While you can eat them right away, placing the bites in the refrigerator for at least 20 minutes helps them firm up and enhances the flavor. Once chilled, they are ready to enjoy!
