  • 2 large chicken breasts (about 1 lb), grilled and sliced
  • 4 large high-protein or whole wheat tortillas
  • 4 cups Romaine lettuce, chopped
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup light Caesar dressing (or a Greek yogurt-based Caesar dressing)
  • 1/4 cup whole grain croutons, crushed (optional for crunch)
  • 1/2 teaspoon cracked black pepper
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Season the chicken breasts with salt and pepper, then grill or pan-sear them over medium heat for about 5-6 minutes per side until fully cooked. Let the chicken rest for a few minutes before slicing it into thin strips or bite-sized cubes.
  2. In a large mixing bowl, combine the chopped Romaine lettuce, shredded Parmesan cheese, and the Caesar dressing. If you like a bit of tang, add a squeeze of fresh lemon juice. Toss everything together until the lettuce is evenly coated.
  3. Add the sliced chicken and the crushed croutons to the bowl with the dressed lettuce. Gently fold the chicken into the mixture so it picks up the flavors of the dressing without wilting the lettuce too much.
  4. Lay the tortillas flat on a clean surface. Divide the chicken Caesar mixture evenly among the four tortillas, placing the filling in the center of each. Be careful not to overfill them, or they will be difficult to roll.
  5. Fold the sides of the tortilla inward, then roll from the bottom up to create a tight wrap. You can serve them immediately or wrap them in foil for a meal on the go.
