  • 1 cup Non-fat Greek Yogurt (plain or vanilla)
  • 1 scoop (approx. 30g) Vanilla Protein Powder
  • 1 tablespoon Sugar-free Cheesecake Instant Pudding Mix
  • 1/2 cup Fresh Mixed Berries (strawberries, blueberries, raspberries)
  • 1/4 cup Sugar-free Whipped Topping
  • 1 teaspoon Vanilla Extract
  • Optional: 1-2 packets of Stevia or Monk fruit sweetener (if extra sweetness is desired)

Instructions

  1. In a medium-sized mixing bowl, add the Greek yogurt, vanilla protein powder, sugar-free cheesecake pudding mix, and vanilla extract. If you are using plain yogurt and want it sweeter, add your choice of sweetener now.
  2. Use a whisk or a large spoon to combine the ingredients until the protein powder and pudding mix are fully incorporated. The mixture will start to thicken significantly as the pudding mix reacts with the moisture in the yogurt.
  3. Gently fold in the sugar-free whipped topping using a spatula. Do not stir too vigorously, as you want to keep the air in the whipped topping to give the dessert its “fluff” texture. This creates that light, mousse-like consistency.
  4. Gently stir in your mixed berries. If you are using large strawberries, it is best to slice them into bite-sized pieces first. Save a few berries to place on top for a beautiful presentation.
  5. While you can eat this immediately, letting it sit in the refrigerator for 15-30 minutes allows the pudding mix to fully set, resulting in a thicker, more cheesecake-like texture. Serve chilled and enjoy!
