Ingredients

  • 1 pound ground turkey
  • 1 taco seasoning packet
  • 1 cup cooked rice (brown or white)
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 avocado, sliced
  • Sour cream or Greek yogurt for topping
  • Shredded cheese (optional)

Instructions

  1. In a skillet over medium heat, cook the ground turkey until browned. Drain any excess fat.
  2. Add the taco seasoning and a small amount of water as directed on the package. Stir until well mixed and cook for another 5 minutes.
  3. Prepare your meal prep containers by dividing the cooked rice, black beans, corn, and diced tomatoes evenly among them.
  4. Top each container with the seasoned turkey, shredded lettuce, and sliced avocado. If desired, add sour cream and shredded cheese on top.

Notes

Store in the refrigerator for up to 4 days. You can also freeze the cooked turkey separately for up to 2-3 months.
