- 1 pound ground turkey
- 1 taco seasoning packet
- 1 cup cooked rice (brown or white)
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1 avocado, sliced
- Sour cream or Greek yogurt for topping
- Shredded cheese (optional)
Instructions
- In a skillet over medium heat, cook the ground turkey until browned. Drain any excess fat.
- Add the taco seasoning and a small amount of water as directed on the package. Stir until well mixed and cook for another 5 minutes.
- Prepare your meal prep containers by dividing the cooked rice, black beans, corn, and diced tomatoes evenly among them.
- Top each container with the seasoned turkey, shredded lettuce, and sliced avocado. If desired, add sour cream and shredded cheese on top.
Notes
Store in the refrigerator for up to 4 days. You can also freeze the cooked turkey separately for up to 2-3 months.
