Greek Yogurt Berry Parfait

Ingredients

  • 2 cups plain or vanilla Greek yogurt
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup low-fat granola
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon chia seeds (optional for extra fiber)
  • Fresh mint leaves for garnish

Instructions

  1. Wash all your berries thoroughly under cold water. If you are using large strawberries, slice them into bite-sized pieces so they layer easily and are easier to eat.
  2. Spoon approximately 1/2 cup of Greek yogurt into the bottom of two glasses or mason jars. Spread it evenly to create a solid base for your toppings.
  3. Place a handful of the mixed berries over the yogurt layer. Sprinkle about two tablespoons of granola over the berries to add a satisfying crunch to the middle of your parfait.
  4. Add another 1/2 cup of yogurt on top of the granola. Follow this with the remaining berries and another sprinkle of granola. If you like it sweet, drizzle half a tablespoon of honey or maple syrup over the top of each jar.
  5. Finish your parfait with a sprinkle of chia seeds and a fresh mint leaf. Serve immediately while the granola is still perfectly crunchy.
