Instructions

  1. In a large mixing bowl, beat the softened butter and brown sugar together until the mixture is light and fluffy. This usually takes about 2 to 3 minutes using an electric mixer on medium speed.
  2. Add the molasses, egg, and vanilla extract to the butter mixture. Beat well until fully combined, scraping down the sides of the bowl as needed to ensure everything is incorporated.
  3. In a separate medium-sized bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, nutmeg, and salt. Mixing these first ensures the spices are evenly distributed throughout the dough.
  4. Slowly add the dry ingredients to the wet ingredients while mixing on low speed. Mix just until a thick dough forms. Be careful not to overmix, as this can make the cookies tough.
