- 1.5 lbs Sirloin steak or Ribeye, cut into 1-inch cubes
- 2 tablespoons Olive oil
- 4 tablespoons Unsalted butter
- 4 cloves Garlic, minced
- 1 teaspoon Salt (or to taste)
- 1/2 teaspoon Black pepper
- 1 tablespoon Fresh parsley, chopped
- 1/4 teaspoon Red pepper flakes (optional)
Instructions
- Start by cutting your steak into uniform 1-inch cubes. Use paper towels to pat the meat completely dry. This is a crucial step for achieving a good sear. Once dry, toss the steak cubes in a bowl with salt, pepper, and olive oil until evenly coated.
- Heat a large cast-iron skillet or heavy frying pan over high heat. Once the pan is smoking hot, add the steak bites in a single layer. Do not overcrowd the pan; work in batches if necessary. Let them sear undisturbed for about 2 minutes to develop a brown crust, then flip and cook for another 1-2 minutes.
- Reduce the heat to medium-high and move the steak to one side of the pan. Add the butter to the empty space. Once melted, stir in the minced garlic and red pepper flakes. Cook the garlic for about 30-60 seconds until it becomes fragrant and the butter starts to slightly brown.
- Toss the steak bites back into the garlic butter mixture until every piece is well-coated. Remove the pan from the heat immediately to prevent the garlic from burning. Sprinkle with fresh chopped parsley and serve immediately while hot.
