Instructions
- Combine cottage cheese, oats, eggs, baking powder, vanilla extract, and salt in a blender. Blend until smooth.
- Heat a skillet over medium heat and add butter or oil.
- Pour a ladle of the batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Serve warm with your favorite toppings.
