Ingredients

- 1 block of firm tofu, pressed and cubed
- 1 cup of edamame (shelled)
- 4 cups of mixed salad greens
- 1/2 cup of shredded carrots
- 1/4 cup of chopped green onions
- 1/4 cup of peanuts, chopped
- 2 tablespoons of soy sauce
- 2 tablespoons of peanut butter
- 1 tablespoon of lime juice
- 1 tablespoon of honey or maple syrup
- 1 teaspoon of sesame oil
- Salt and pepper to taste
Instructions
- Whisk together soy sauce, peanut butter, lime juice, honey, and sesame oil to make the dressing. Set aside to allow the flavors to meld.
- Sauté the cubed tofu over medium heat until golden brown and crispy, about 5-7 minutes. Set aside to cool slightly.
- Combine the mixed greens, edamame, shredded carrots, and green onions in a large salad bowl. Toss gently to mix.
- Add the crispy tofu and chopped peanuts on top of the salad. Drizzle the dressing over the salad and toss gently. Season with salt and pepper to taste before serving.
Notes
Press tofu well to remove excess moisture for a crisp texture. Chill the salad for 10 minutes before serving for better flavor.
