- 3–4 pounds beef chuck roast
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Start by placing the chopped carrots, potatoes, onion, and minced garlic in the bottom of the crockpot.
- Season the beef chuck roast generously with salt, pepper, and dried thyme.
- Pour the beef broth and Worcestershire sauce over the seasoned roast.
- Cover the crockpot and cook on low for 480 minutes or on high for 240-300 minutes.
- Once the cooking time is up, slice the pot roast and serve it alongside the vegetables.
Notes
For added depth of flavor, consider searing the roast before placing it in the crockpot. Feel free to swap out vegetables or add fresh herbs for variation.
