Instructions
- In a large crockpot, combine the beef stew meat, sliced carrots, diced potatoes, chopped onion, and minced garlic.
- In a separate bowl, mix together the beef broth, tomato paste, dried thyme, dried rosemary, and season with salt and pepper to taste.
- Pour the broth mixture over the beef and vegetables in the crockpot, ensuring everything is coated well.
- Cover and cook on low for 8 hours or high for 4 hours. The stew is ready when the beef is fork-tender and the vegetables are soft. Serve hot.
