Ingredients

  • 2 pounds baby potatoes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Boil the baby potatoes in salted water until fork-tender, about 15 minutes.
  3. Drain the potatoes and let them cool slightly. Place on a baking sheet and gently smash with a fork or potato masher.
  4. In a small saucepan, melt the butter over medium heat and add the minced garlic. Cook for 1-2 minutes until fragrant.
  5. Brush the garlic butter generously over the smashed potatoes.
  6. Sprinkle the Parmesan cheese over the potatoes, and season with salt and pepper.
  7. Bake in the oven for 20-25 minutes, until the tops are golden and crispy.
  8. Garnish with freshly chopped parsley before serving.

Notes

Ensure even-sized baby potatoes for uniform cooking. For extra crispiness, broil for the last 2-3 minutes.
