  • 1/4 cup mayonnaise
  • 2 tablespoons Mexican crema or sour cream
  • 1 tablespoon fresh lime juice
  • 1/4 cup crumbled Cotija cheese
  • 2 tablespoons fresh cilantro, finely chopped
  • Lime wedges for serving

Instructions

  1. Step 1: Slice the Corn into Ribs
    Carefully cut each ear of corn in half crosswise to make two shorter cylinders. Stand each piece upright on its flat end and cut it in half vertically through the center of the cob. Then, cut each piece in half vertically again to create four ribs per section. Use a sharp, heavy-duty knife and work slowly to ensure safety while cutting through the tough cob.
  2. Step 2: Season the Ribs
    In a large mixing bowl, combine the corn ribs with the olive oil, chili powder, smoked paprika, garlic powder, and salt. Toss thoroughly until every kernel and the sides of the cobs are evenly coated with the oil and spice mixture. This ensures even browning and flavor in every bite.
  3. Step 3: Cook the Corn
    Preheat your air fryer to 400°F (200°C). Place the corn ribs in the basket in a single layer, ensuring they are not too crowded. Air fry for 12 to 15 minutes, shaking the basket halfway through. The corn is done when the ribs have curled significantly and the kernels are golden brown and slightly charred. If using an oven, bake at 425°F (220°C) for 20-25 minutes on a parchment-lined tray.
  4. Step 4: Mix the Elote Sauce
    While the corn is cooking, prepare the sauce by whisking together the mayonnaise, Mexican crema (or sour cream), and lime juice in a small bowl. This sauce will serve as the creamy, tangy binder for the rest of your toppings.
  5. Step 5: Garnish and Serve
    Transfer the hot corn ribs to a serving platter. Drizzle the lime-crema sauce over the ribs while they are still warm. Sprinkle generously with the crumbled Cotija cheese and fresh cilantro. Serve immediately with extra lime wedges on the side for an added burst of citrus.
