Instructions
- Heat the olive oil in a large pot over medium heat until it shimmers.
- Add the minced garlic and sauté until fragrant, about 30 seconds.
- Stir in the diced tomatoes, vegetable broth, heavy cream, dried basil, salt, and pepper, mixing well.
- Bring the mixture to a boil, then add the pasta shells, reduce the heat, and let simmer until the pasta is cooked, about 10-12 minutes.
- Serve hot, garnished with fresh basil.
Notes
For extra flavor, opt for roasted garlic instead of raw. You can add a pinch of red pepper flakes for heat.
