- 2 ripe mangoes, peeled and diced
- 1 cup coconut milk
- 1/4 cup honey or agave syrup
- 1 tablespoon lime juice
- 1/2 teaspoon vanilla extract
Instructions
- Combine the diced mangoes, coconut milk, honey, lime juice, and vanilla extract in a blender. Blend until smooth.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks into the molds and freeze for at least 240-360 minutes or until solid.
- Run warm water over the outside of the molds for a few seconds to remove the popsicles. Enjoy!
Notes
For a creamier texture, use full-fat coconut milk. Consider ripe mangoes for natural sweetness and add a pinch of salt to enhance flavors.
