A refreshing treat perfect for hot summer days, these creamy mango coconut popsicles blend tropical flavors for a delightful dessert.

Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1 cup coconut milk
  • 1/4 cup honey or agave syrup
  • 1 tablespoon lime juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Combine the diced mangoes, coconut milk, honey, lime juice, and vanilla extract in a blender. Blend until smooth.
  2. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  3. Insert sticks into the molds and freeze for at least 240-360 minutes or until solid.
  4. Run warm water over the outside of the molds for a few seconds to remove the popsicles. Enjoy!

Notes

For a creamier texture, use full-fat coconut milk. Consider ripe mangoes for natural sweetness and add a pinch of salt to enhance flavors.
