Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped jalapeños (fresh or pickled)
  • 1/2 cup diced onion
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt, pepper, and garlic powder. Cook the chicken breasts until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.
  2. In the same skillet, add diced onion and jalapeños, sautéing until softened.
  3. Reduce heat to low, add cream cheese, and stir until melted and combined. Stir in shredded cheddar cheese until melted and smooth.
  4. Return the chicken to the skillet, spooning the creamy mixture over the top. Cook for an additional 3-5 minutes until heated through.
