- 4 chicken breasts
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup chopped jalapeños (fresh or pickled)
- 1/2 cup diced onion
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt, pepper, and garlic powder. Cook the chicken breasts until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add diced onion and jalapeños, sautéing until softened.
- Reduce heat to low, add cream cheese, and stir until melted and combined. Stir in shredded cheddar cheese until melted and smooth.
- Return the chicken to the skillet, spooning the creamy mixture over the top. Cook for an additional 3-5 minutes until heated through.
Notes
Serve with rice, quinoa, or a green salad. For added flavor, top with fresh cilantro or avocado slices.
