  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • 1 pinch of sea salt
  • Optional: 2 tablespoons dark chocolate chips or fresh berries for topping

Instructions

  1. Place the cottage cheese, unsweetened cocoa powder, maple syrup (or honey), vanilla extract, and a pinch of salt into a blender or food processor. Make sure the lid is secured tightly before starting.
  2. Blend the mixture on high speed for about 1 to 2 minutes. You want to ensure that all the cottage cheese curds are completely broken down. Stop and scrape the sides of the blender once or twice to ensure a perfectly uniform and silky texture.
  3. Give the mousse a quick taste. If you prefer a sweeter dessert, you can add another tablespoon of maple syrup. If you want a deeper chocolate flavor, add an extra teaspoon of cocoa powder and pulse again until combined.
  4. Spoon the mixture into four individual ramekins or small glass cups. While you can eat this immediately, it is best to let it chill in the refrigerator for at least 30 minutes to an hour. This allows the mousse to set and the flavors to meld together.
  5. Just before serving, top each cup with your favorite garnishes. Fresh raspberries, a sprinkle of sea salt, or a few dark chocolate chips add the perfect finishing touch.
