Instructions
- Cook the rice according to package instructions, usually about 15 minutes.
- Mix lime juice, olive oil, minced garlic, salt, and pepper to create a marinade.
- Add the shrimp to the marinade and let it sit for 10-15 minutes.
- Heat a skillet over medium heat and cook the marinated shrimp for 2-3 minutes on each side until pink.
- Assemble by placing a serving of rice in a bowl, topping with shrimp, cilantro, and optional corn and avocado.
- Serve warm and enjoy!
