Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 cup rice (white or brown)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • 1 avocado, sliced (optional)

Instructions

  1. Cook the rice according to package instructions, usually about 15 minutes.
  2. Mix lime juice, olive oil, minced garlic, salt, and pepper to create a marinade.
  3. Add the shrimp to the marinade and let it sit for 10-15 minutes.
  4. Heat a skillet over medium heat and cook the marinated shrimp for 2-3 minutes on each side until pink.
  5. Assemble by placing a serving of rice in a bowl, topping with shrimp, cilantro, and optional corn and avocado.
  6. Serve warm and enjoy!

Notes

Use fresh lime juice for best flavor and avoid overcooking the shrimp for optimal texture.
