A vibrant and satisfying salad combining tender beef, colorful vegetables, and a refreshing cilantro lime dressing.

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 lb steak (flank or sirloin)
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 4 cups mixed greens
  • 1 avocado (sliced)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Cook the steak on a grill or stovetop until desired doneness. Aim for medium-rare to medium for the best flavor and tenderness. Once cooked, let the steak rest for about 5 minutes before slicing it into thin strips.
  2. Heat a splash of oil in a skillet over medium heat. Add the sliced bell pepper and onion, sautéing them until they are tender and slightly caramelized, about 5-7 minutes.
  3. Whisk together lime juice, olive oil, cumin, salt, and pepper in a small bowl to create the cilantro lime dressing.
  4. Toss together the mixed greens, avocado, cooked steak, sautéed vegetables, and chopped cilantro in a large bowl. Drizzle the dressing over the salad and mix gently before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep the dressing separate until ready to eat.
