- 1 lb chicken breast
- 1 cup rice (white or brown)
- 1 can black beans
- 1 cup corn (frozen or canned)
- 1 cup salsa
- 1 avocado, sliced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook rice according to package instructions. You can use white or brown rice based on your preference.
- Mix together olive oil, chili powder, cumin, salt, and pepper until well combined.
- Coat the chicken breasts evenly with the spice mixture. Grill or sauté them until cooked through, about 5-7 minutes per side.
- Let the chicken rest for a couple of minutes before slicing into strips.
- Layer cooked rice, drained black beans, corn, sliced chicken, and your choice of salsa in serving bowls.
- Top with avocado slices, shredded cheese, sour cream, and garnish with fresh cilantro.
Notes
For extra flavor, marinate the chicken in the spice mixture for at least 30 minutes before cooking.
