- 1 lb chicken breasts
- 1 cup teriyaki sauce
- 2 cups broccoli florets
- 1 cup bell peppers, sliced
- 1 cup carrots, sliced
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon sesame seeds
- Cooked rice or quinoa, for serving
Instructions
- Place the chicken breasts in the crockpot.
- In a bowl, mix the teriyaki sauce, minced garlic, and minced ginger. Stir until well combined, then pour this mixture over the chicken.
- Add the broccoli florets, sliced bell peppers, and carrots on top of the chicken. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks, mixing it with the vegetables and sauce. Serve over cooked rice or quinoa, garnished with sesame seeds.
Notes
Marinate the chicken in teriyaki sauce for a few hours for added flavor. Customize vegetables based on availability.
