Ingredients

  • 12 cherry tomatoes (red or heirloom)
  • 12 fresh mozzarella pearls (bocconcini)
  • 12 large fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 12 small wooden skewers or toothpicks

Instructions

  1. Wash the cherry tomatoes and pat them dry with a paper towel. Rinse the fresh basil leaves and gently pat them dry as well. If your mozzarella pearls are sitting in liquid, drain them and pat them dry so they don’t make the skewers slippery.
  2. Take a small skewer and slide on a cherry tomato. Fold a basil leaf in half or thirds and slide it onto the skewer next. Finish by adding a mozzarella pearl at the end. Repeat this process until all 12 skewers are assembled.
  3. Arrange the assembled skewers on a serving platter. Drizzle the extra virgin olive oil evenly over the skewers, followed by a generous drizzle of the thick balsamic glaze. Finish with a sprinkle of sea salt and freshly ground black pepper to enhance the flavors.
