- 2 cups butternut squash puree (roasted or canned)
- 2 cups sharp cheddar cheese, shredded
- 1/2 cup parmesan cheese, grated
- 2 cups whole milk
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 1/2 teaspoon ground nutmeg
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1/2 cup panko breadcrumbs (optional for topping)
Instructions
- Step 1: Boil the Pasta: Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until it is al dente. Drain the pasta and set it aside, making sure not to overcook it as it will soften further in the sauce.
- Step 2: Prepare the Squash Puree: If you are using fresh squash, roast cubes of butternut squash until tender and blend them in a food processor until smooth. If you are using canned puree, simply measure out two cups. Set the puree aside for the sauce base.
- Step 3: Create the Roux: In a large saucepan or Dutch oven, melt the butter over medium heat. Whisk in the flour and cook for about 1-2 minutes until it forms a light golden paste. This creates the thickener for your creamy cheese sauce.
- Step 4: Simmer the Sauce: Slowly whisk in the milk, ensuring there are no lumps. Continue to cook and stir until the mixture thickens slightly. Stir in the butternut squash puree, garlic powder, nutmeg, smoked paprika, salt, and pepper until the sauce is uniform in color.
- Step 5: Melt the Cheese: Lower the heat and add the shredded cheddar and parmesan cheese. Stir constantly until the cheese has melted completely and the sauce is thick and glossy. Taste and adjust the seasoning if necessary.
- Step 6: Combine and Serve: Add the cooked pasta into the cheese sauce and toss until every noodle is well-coated. If you prefer a baked version, transfer the mixture to a baking dish, sprinkle with panko breadcrumbs and extra cheese, and broil for 3-5 minutes until golden brown. Serve immediately.
