- 1 large head of cauliflower, cut into bite-sized florets
- 3/4 cup all-purpose flour (or gluten-free blend)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup milk of choice (or water)
- 2/3 cup buffalo hot sauce
- 2 tablespoons melted butter or coconut oil
- 1 tablespoon honey or maple syrup (optional, for balance)
Instructions
- Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, whisk together the flour, garlic powder, onion powder, salt, pepper, and milk until the mixture is smooth.
- Add the cauliflower florets to the bowl with the batter. Toss gently until every piece is evenly coated. Lift each floret out, shaking off any excess batter, and place them in a single layer on the prepared baking sheet.
- Place the baking sheet in the oven and bake for 15 to 20 minutes. Flip the florets halfway through the cooking time for even crispness.
- While the cauliflower is baking, whisk together the buffalo sauce, melted butter, and honey in a small bowl.
- Remove the cauliflower from the oven and brush the buffalo sauce generously over each piece, or toss them in a bowl with the sauce. Return them to the oven for another 5 to 10 minutes until they are bubbly and slightly charred at the edges.
