- 1 cup fresh or frozen blueberries
Instructions
- Combine oat flour, sugar, baking powder, and salt in a mixing bowl.
- Whisk together the milk, egg, and melted coconut oil until smooth.
- Pour the wet ingredients into the dry ingredients and mix gently; fold in blueberries.
- Heat a non-stick skillet over medium heat and grease it lightly.
- Pour 1/4 cup of batter for each pancake onto the skillet and cook until bubbles form, then flip.
- Serve warm with syrup, yogurt, or toppings of your choice.
Notes
For fluffier pancakes, let the batter rest for 5-10 minutes before cooking. Adjust sweetness by adding more sugar if desired.
