- 1 lb Lean ground beef
- 1 Yellow onion, diced
- 1 Red bell pepper, chopped
- 3 Cloves garlic, minced
- 1 can (15 oz) Pumpkin puree (not pumpkin pie filling)
- 1 can (15 oz) Diced tomatoes, with juice
- 1 can (15 oz) Kidney beans, rinsed and drained
- 2 cups Beef broth
- 2 tbsp Chili powder
- 1 tbsp Ground cumin
- 1 tsp Smoked paprika
- 1/2 tsp Salt (or to taste)
- 1/2 tsp Black pepper
- 1 tbsp Olive oil
Instructions
- Step 1: Sauté the Vegetables
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and red bell pepper. Cook for about 5 to 7 minutes until the vegetables are soft and the onion is translucent. Stir in the minced garlic and cook for another minute until fragrant. - Step 2: Brown the Beef
Add the ground beef to the pot. Use a wooden spoon to break the meat apart into small crumbles. Cook until the beef is fully browned and no longer pink. If there is excess grease in the pan, carefully drain it out before proceeding to the next step. - Step 3: Season the Mixture
Sprinkle the chili powder, cumin, smoked paprika, salt, and black pepper over the beef and vegetables. Stir well to coat the meat in the spices. Letting the spices toast for a minute with the meat helps to unlock their full flavor. - Step 4: Combine the Base
Pour in the diced tomatoes (with their juices), the pumpkin puree, and the kidney beans. Stir until the pumpkin is fully incorporated into the mixture. Gradually pour in the beef broth and stir again to combine everything into a cohesive chili base. - Step 5: Simmer to Perfection
Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes. This allows the flavors to meld together and the pumpkin to thicken the sauce. Stir occasionally to prevent the bottom from sticking. - Step 6: Final Seasoning
Taste the chili and adjust the salt or pepper if needed. If you prefer a thinner consistency, you can add a splash more broth. Once it reaches your desired thickness and flavor, it is ready to serve.
