Delightful and fluffy banana pancakes made with just three ingredients, perfect for a quick breakfast.

Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1/2 cup oats

Instructions

  1. Start by peeling and placing the ripe bananas in a mixing bowl. Use a fork to mash them until they are smooth with only a few lumps remaining.
  2. Crack the eggs into the bowl with the mashed bananas. Add the oats and stir everything together until well combined.
  3. Heat a non-stick skillet over medium heat. Pour in a small amount of the batter for each pancake, using about a quarter cup per pancake. Cook until bubbles form, about 2-3 minutes. Then, flip the pancakes and continue cooking until golden brown, about another 2 minutes.
  4. Once cooked, remove the pancakes from the skillet and serve warm with your favorite toppings.

Notes

For added toppings, consider maple syrup, cinnamon, or berries. Store leftovers in an airtight container for up to 3 days.
