Instructions

  1. Preheat and Prepare: Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin with non-stick spray or line it with paper muffin liners to ensure easy removal after baking.
  2. Whisk Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. Ensure there are no large clumps so the leavening agents are evenly distributed.
  3. Combine Wet Ingredients: In a separate medium bowl, beat the egg slightly. Whisk in the vegetable oil, milk, and vanilla extract until the mixture is smooth and well combined.
  4. Mix the Batter: Pour the wet ingredients into the bowl with the dry ingredients. Use a spatula or wooden spoon to stir them together just until moistened. Be careful not to overmix, as this can make the muffins tough.
  5. Fold in the Apples: Gently fold the diced apples into the batter. Distribute them evenly so every muffin gets a good amount of fruit. The batter will be quite thick.
