  • 1 teaspoon vanilla extract
  • For the coating: 1/2 cup granulated sugar, 1 tablespoon cinnamon, and 4 tablespoons melted butter

Instructions

  1. Step 1: Reduce the Apple Cider
    In a small saucepan, simmer the 1 1/2 cups of apple cider over medium-low heat until it has reduced to about 1/2 cup. This usually takes about 15-20 minutes. Set it aside to cool completely before using.
  2. Step 2: Prepare the Oven and Pans
    Preheat your oven to 350°F (175°C). Lightly grease a donut pan with non-stick cooking spray or a little bit of butter so the donuts release easily after baking.
  3. Step 3: Whisk Dry Ingredients
    In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Make sure there are no large lumps in the flour.
  4. Step 4: Combine Wet Ingredients
    In a separate medium bowl, whisk together the cooled, reduced apple cider, the egg, buttermilk, melted butter, and vanilla extract until well combined.
  5. Step 5: Create the Donut Batter
    Gently pour the wet ingredients into the dry ingredients. Use a spatula to fold the mixture together until just combined. Be careful not to overmix, as this can make the donuts tough.
  6. Step 6: Fill the Donut Pan
    Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full. You can also use a piping bag or a plastic bag with the corner snipped off for a cleaner application.
  7. Step 7: Bake and Cool
    Bake for 12-15 minutes, or until the donuts spring back when lightly touched. Let them cool in the pan for 5 minutes before transferring them to a wire rack.
