  • 3 large apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup orange juice or milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a springform pan to ensure the cake releases easily after baking. Set this aside while you prepare the other components.
  2. In a medium bowl, toss the sliced apples with 2 tablespoons of the sugar and the full tablespoon of cinnamon. Coating the apples first ensures that every bite of fruit is bursting with warm spice flavor.
  3. In a large mixing bowl, whisk together the flour, the remaining sugar, baking powder, and salt. Making sure these are well-combined prevents any clumps and ensures an even rise for your cake.
  4. Add the eggs, vegetable oil, vanilla extract, and orange juice to the dry ingredients. Stir the mixture with a wooden spoon or a spatula until just combined. Be careful not to overmix, as this can make the cake tough.
  5. Pour half of the batter into the prepared pan. Arrange half of the cinnamon-coated apples over the batter. Pour the remaining batter on top and finish with the rest of the apples. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for about 15 minutes. This allows the structure to set. Carefully remove it from the pan and place it on a wire rack to cool completely before serving.
